Aval Payasam, Rice Flakes Kheer, Poha Kheer
Ingredients:
  • Rice flakes - 1 cup, refer notes
  • Milk - 4 cup
  • Sugar - ½ - ¾ cup, adjust
  • Cardamom powder - ¼ Teaspoon
  • Cashew nuts - 6-10 Nos
  • Raisins - 6-8 Nos
  • Ghee - 1 Tablespoon
Instructions:
  1. Heat ghee in a pan, fry cashew nuts until light golden in color on low heat.
  2. Then add in the raisins and fry until fluffy and transfer it to a bowl.
  3. Then add the rice flakes in the same pan and fry for 2-3 minutes or until crispy and the color slightly changes. Transfer to a bowl and keep it aside.
  4. In a sauce pan, add in the milk and let it boil.
  5. Once boiled, reduce heat to low and cook until the milk is slightly reduced. Stir occasionally.
  6. Then add in the roasted rice flakes, sugar and combine well.
  7. Cook until the rice flakes are soft and the kheer is semi-thick. Stir occasionally.
  8. Once the kheer is ready, add in the cardamom powder, roasted cashews, raisins and mix well.
  9. Remove from heat and serve warm.

Notes:

  • You can use white or red rice flakes. I used thin red rice flakes.
  • If you are using thick rice flakes, gently rinse it in color water for 2 times. Drain immediately and set aside.
  • Then add it in the milk(step #6), once the milk is slightly reduced. You can skip step #3.
