   Happy Diwali   

Ingredients:
  • Long grain Basmati Rice - 2 cups
  • Ghee or Oil - 2-3 Tablespoon,adjust according to your taste
  • Cumin Seeds - 1 ½ - 2 Tablespoon, adjust according to your taste
  • Onion, medium sized - 1 Nos, thinly sliced
  • Water - 3 ¼ - 3 ½ cups
  • Cashew nuts - 8-12 Nos
  • Salt to taste
Instructions:
  1. Wash and soak basmati rice in water for 20 minutes and drain the water completely. Set aside.
  2. Heat the ghee or oil in a deep pan, add in the cashew nuts and stir fry until light brown in color. Transfer to a paper towel.
  3. Then add cumin seeds into the same pan and saute for few seconds.
  4. Add in the sliced onion and saute until it turns light brown.
  5. Add in the drained rice and saute for 5-7 minutes on medium heat.
  6. Add in the water, salt and cook over medium flame until the water starts boiling.
  7. Once the water starts boiling, set heat to the lowest setting; Cover the pan with a lid and cook for 20-25 minutes on low heat.
  8. Remove from heat and let it stand for 5-8 minutes.
  9. Open the lid, gently mix the rice; Garnish with fried cashew nuts and serve hot.
